Cinnamon Maca Energy Bites

 These cinnamon maca energy bites by Alexandra of @mamainthemakin are the perfect grab-and-go treat for just about any situation. Pre-workout fuel, a sweet treat at breakfast, a mid-afternoon snack with the 3pm slump rolls around and the easiest way to sneak a little maca into your diet. These bites are not only delicious and taste just like a cinnamon raisin granola bar, but they are also refined-sugar free. Naturally sweetened with dates and combined with walnuts for a healthy dose of omega 3 fatty acids, these are bites are sure to provide brain boosting energy wherever you may be.

 

Ingredients

  •  2 Cups walnuts
  •  1 Cup dates (pitted)
  •  1 Tablespoon ECO Maca Powder
  •  1 Teaspoon cinnamon
  •  1 Tablespoon collagen peptides (optional for extra protein)

Instructions

  1. Place the dates in the food processor and process until a paste forms. Remove the paste and place it into a bowl.

  2. Remove the paste and place it into a bowl.

  3. Place the walnuts, maca, cinnamon and collagen peptides into the processor and pulse until small pieces remain, but before it becomes a flour consistency.

  4. Add the dates back into the processor and blend until combined and a sticky dough forms.

  5. Use a ½” ice cream scoop or a spoon, and roll the dough gently in your hands.

  6. Option to roll them in hemp hearts for an extra boost of heart healthy omega 3 fatty acids or simply place them into a storage container. Store in the freezer for 1 month or refrigerator for about 1 week.
