Raw Cookie Dough Bites

This recipe incorporates the best of both cookie dough and healthy foods. With no baking required, and filled with superfood ingredients and only natural sugars, this recipe is one of our favorites!  Enjoy these little morsels as a nutritious dessert, a breakfast treat, or as a trail-side snack. Any way you try them, we think they’ll become one of your favorites too.

  • 2 Cups
    ECO Raw Cashews - Ground to a flour in a Vitamix or a Magic Bullet
  • 1 Cup
    Oat Flour - Made from oats in Vitamix or Magic Bullet
  • 3
    Medjool Dates Pitted
  • 1 Pinch
    ECO Himalayan Pink Salt
  • 1 1/2 Teaspoon
    Vanilla Extract
  • 1 Cup
    ECO Raw Cacao Nibs
  • 1/2 Cup
    ECO Goji Berries (Can substitute ECO Golden Berries or Mulberries)


  1. In a food processor, mix oat and cashew flour with honey, dates, vanilla and salt.

  2. In a medium-sized bowl, combine the flour mixture with the rest of the ingredients. Make bite-sized balls by squeezing and rolling the mixture between your hands.

  3. Tips:

    When processing the Cashews, don't blend for too long or you will create cashew butter.

    Store any leftovers in the fridge in a glass jar. If you don't have any leftovers, don't worry. We didn't either. ;)
